For The Lamb
- 1 pack of The Country Victualler Lamb Chops
- 1½ tbsp heather honey or good-quality British honey
- 1 tbsp olive oil
- 1 small garlic clove, finely grated
- 1 tsp fresh rosemary, finely chopped
- 1 tsp fresh lemon juice
- Sea salt
- Freshly ground black pepper
To Serve
- 1 pack The Country Victualler Dauphinoise Potatoes with Double Cream & Crème Fraîche
- 1 pack The Country Victualler Carrot & Swede Crush with Brown Butter & Thyme
- Optional seasonal green vegetables
- Fresh rosemary or thyme to finish
How To Make Autumn Lamb Chops With Heather Honey
1. Prepare The Sides
Start with the sides so everything is ready to come together at the same time.
Our Dauphinoise Potatoes with Double Cream & Crème Fraîche are ready to cook from frozen. Simply follow the cooking instructions on the pack and cook until piping hot throughout with a beautifully golden top.
If you're choosing the Carrot & Swede Crush with Brown Butter & Thyme, this can be prepared while the lamb cooks, following the instructions on the pack. It's a wonderfully rustic alternative to potatoes and brings a lovely earthy sweetness to the dish.
2. Make The Honey & Rosemary Glaze
Mix the honey, olive oil, garlic, rosemary and lemon juice together in a small bowl.
The lemon adds just enough acidity to balance the sweetness of the honey and the richness of the lamb.
3. Prepare The Lamb
Take the lamb chops out of the fridge shortly before cooking and pat them dry with kitchen paper.
Season generously with sea salt and freshly ground black pepper.
4. Sear The Lamb
Heat a heavy-based frying pan or griddle until hot. Add a small drizzle of oil and place the lamb chops into the pan.
Cook until beautifully browned, then turn and continue cooking according to the thickness of the chops and your preferred level of doneness.
5. Add The Honey Glaze
When the lamb is almost cooked, reduce the heat slightly and brush the chops generously with the honey, garlic and rosemary mixture.
Turn the chops once or twice so the glaze becomes glossy and lightly caramelised.
Kitchen tip: keep the heat under control once the honey goes into the pan. Honey can catch quickly, so you're looking for a beautiful caramelised finish rather than burnt edges.
6. Rest & Serve
Remove the lamb from the pan and allow it to rest for a few minutes.
Spoon the creamy Dauphinoise onto warm plates, add the lamb chops and finish with the Carrot & Swede Crush or your favourite seasonal greens.
Spoon over any delicious juices from the pan and finish with a little fresh rosemary.
