We are very proud to be the sole producer of the supreme and multi-award-winning Alderton ham. “A Rick Stein Food Hero and he knows what he’s talking about”.The Country Victualler is proud to have supplied Alderton Hams to Partridges of Sloane Street since their opening in 1973, also Fortnum and Mason. Created in the small village of Alderton by Colonel Dickinson, late of the Royal Ulster Rifles, his recipe for this deliciously moist and succulently sweet ham with a smokey undertone has been passed down through the generations but never altered. It’s still made today as he originally created it. Steamed and then baked with a traditional Marmalade glaze, to our secret recipe, is what makes this ham a firm favourite with the well-heeled of London and ham lovers across the Country.

This feast worthy ham is deliciously roasted in honey and cloves to give it a sweet aromatic flavour. Wonderful for special occasions or to have on hand to feed unexpected guests. Any remaining can be used in a beautiful honey roast ham sandwich. The pork is succulent and tender with a delicate covering of fat adding to the succulence during cooking, just like ham used to be.
Purely and simply a deliciously unadulterated ham. Perfect with eggs for breakfast, a sandwich for lunch or a spaghetti carbonara for supper.
After many requests for a smaller version of our hams, we created our Mini Ham. Perfect for smaller gatherings and boneless for easy carving. Exactly the same as our other Hams, cut from the cured leg.
Victualler’s Orange & Stout Boneless Ham Victualler’s Ham – Full of flavour, we keep the exact recipe a secret, but we believe it’s our unique marinade, together with a traditional marmalade glaze that makes this ham so special. Available as a whole, half or mini ham.
Whole hams weigh at least 4.50 kg and provides approx 65-70 generous slices.
Half hams weigh at least 2.30 kg and provide approx 30-35 generous slices.
After many requests for a smaller version of our hams, we created our Mini Ham. Perfect for smaller gatherings and boneless for easy carving. Exactly the same as our other Hams, cut from the cured leg. With a minimum weight of 1.4kg, It will feed 10-15 people generously.

Our most popular pâté, still blended to our original recipe of 40 years. Our version of this perennial favourite is full flavoured, smooth and well seasoned with thyme, garlic and brandy. Delicious served with crusty bread for a light lunch or starter with a lightly dressed salad.

If you’re a lover of Ham you are in for a treat. Ideal for a picnic or a light lunch. Delicious on its own or with your favourite chutney. All of our pies are made to order in our bakery to ensure they arrive to you fresh and perfectly crisp and crumbly. Our pork is almost all sourced locally from Nottinghamshire farms, most frequently from a farm just six miles from us, enabling us to provide the traceability and provenance with the modern customer needs. With the conservation of traditional farming high in our minds, it was a delight to discover the lovely Chafer family farm.
Lee and his wife Geraldine are both so committed to ensuring their livestock have the highest quality of life they can provide. They farm exclusively Duroc pigs, which have a naturally amazing marbling of fat throughout, they are free-range, free from antibiotics, farm assured and RSPCA certified, but they go above and beyond the requirements needed to achieve this.
Fed on-demand with a groundbreaking, solar-powered ESF feeder (one of only 2 in the country at present) the pigs are in control of when and how much they eat.
We are committed to supporting farmers like Lee and Geraldine, who are dedicated to high welfare standards for their animals.
