The Country Victualler Silverside is leaner than Topside and can be used as an inexpensive roasting joint. This lean meat is perfect for a slow-cooked pot roast. Steaks cut from the Silverside make delicious, tasty Braising Steaks. This cut is very versatile and can be braised or boiled.

Oven Instructions: Oven 180°C/Fan 160°C/Gas 4 Rub the joint with a little oil and season with sea salt and black pepper, cover the joint tightly with tin foil. Place joint in a roasting tray, cook in the centre of a pre-heated oven. Calculate cooking times at 6 minutes per 100g (medium), 8 minutes per 100g (well done). Remove tin foil for last 15 minutes of cooking time. Allow joint to rest for 10 minutes before carving.

As with all our beef, our Silverside is locally sourced, and correctly matured for a minimum of 3 weeks to allow the flavours to fully develop.
