Take the joint out of the fridge, remove all packaging and allow the turkey to come up to room temperature, for at least an hour or so. Preheat the oven to 190°C/375F/Gas Mark 5. Cooking times are approx 40 minutes for every 1kg + 20 minutes, so depending on the joint size. Check that the centre of the joint is fully cooked and is piping hot and that the juices run clear. Leave the joint to rest after cooking for around 20 minutes prior to carving.

Ready to eat To reheat the ham without drying it out, the best way to do this is to place the ham on a rack in a roasting pan. Add water to the bottom of the pan and cover the whole thing tightly with foil. Bake at 160°for 15-20 minutes per 500g of ham, until a meat thermometer registers 72°.
